Description

These delightful Apple Cheddar Bundles combine the sweetness of Honeycrisp apples with the savory sharpness of cheddar cheese, all encased in flaky puff pastry and drizzled with honey. A perfect blend of sweet and savory, ideal for a snack or appetizer.


Ingredients

  • 2 medium Honeycrisp apples (about 1 1/4 lb.), cored, sliced 1/8″ thick
  • Zest from 1 lemon
  • 6 Tbsp. honey, divided
  • 1 (17.3-oz.) frozen package puff pastry, thawed
  • 1 large egg
  • 8-oz. block sharp cheddar, grated
  • 1 1/2 tsp. flaky sea salt
  • 1/4 cup chopped roasted pecans
  • 1 tsp. fresh thyme leaves


Instructions

  1. Preheat oven to 400°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, toss apples, lemon zest, and 4 tablespoons honey.
  3. Cut each pastry sheet into 4 (4.5″ x 4.5″) squares for a total of 8.
  4. In a small bowl, whisk egg with a splash of water (egg wash).
  5. Brush outer edges of pastry with egg wash.
  6. Rotate pastry squares so a corner faces you.
  7. Place 1 tablespoon grated cheese on the bottom.
  8. Top with 10 to 11 apple slices.
  9. Place 1 tablespoon grated cheese on each side of apple slices.
  10. Fold left side over top and lightly press to seal.
  11. Fold right side over top and press to seal.
  12. Brush tops and sides of pastry with egg wash; sprinkle with sea salt.
  13. Arrange 4 pastries on each prepared tray.
  14. Bake puffs, rotating trays halfway through, until pastry is puffed up and golden brown around the edges, 20 to 25 minutes.
  15. Let cool 5 minutes.
  16. Arrange on a platter. Drizzle with remaining 2 tablespoons honey.
  17. Top with pecans and thyme.

Notes

  • Ensure the puff pastry is fully thawed but still cold for best results when working with it.
  • Adjust the amount of honey and cheddar to your preference.
  • For a spicier kick, you could add a pinch of cinnamon to the apple mixture.
