Description

A delicious banana bread recipe featuring the rich, nutty flavor of brown butter and studded with chocolate chips.


Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup granulated sugar (or 1/2 cup granulated, 1/4 cup brown sugar)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 2-3 medium bananas)
  • 1/2 cup sour cream or plain yogurt
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Brown the butter: In a light-colored saucepan, melt the 1/2 cup butter over medium heat. Continue to cook, stirring occasionally, until the butter turns amber in color and nutty-smelling brown bits appear at the bottom. This usually takes 5-7 minutes. Remove from heat immediately and pour into a heatproof bowl to cool slightly.
  2. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  3. In a medium bowl, whisk together flour, baking soda, and salt.
  4. In a large bowl, combine the slightly cooled brown butter and granulated sugar (and brown sugar if using). Whisk until well combined.
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. Add mashed bananas and sour cream to the wet ingredients, mixing until just combined.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  8. Gently fold in the chocolate chips.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 55-70 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, tent loosely with foil.
  11. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
