A delicious banana bread recipe featuring the rich, nutty flavor of brown butter and studded with chocolate chips.
Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup granulated sugar (or 1/2 cup granulated, 1/4 cup brown sugar)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mashed ripe bananas (about 2-3 medium bananas)
- 1/2 cup sour cream or plain yogurt
- 1 cup semi-sweet chocolate chips
Instructions
- Brown the butter: In a light-colored saucepan, melt the 1/2 cup butter over medium heat. Continue to cook, stirring occasionally, until the butter turns amber in color and nutty-smelling brown bits appear at the bottom. This usually takes 5-7 minutes. Remove from heat immediately and pour into a heatproof bowl to cool slightly.
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, combine the slightly cooled brown butter and granulated sugar (and brown sugar if using). Whisk until well combined.
- Beat in eggs one at a time, then stir in vanilla extract.
- Add mashed bananas and sour cream to the wet ingredients, mixing until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 55-70 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, tent loosely with foil.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
