Description

Spicy baked chicken meatballs tossed in a tangy buffalo sauce, perfect as an appetizer or game day snack.


Ingredients

  • 1 pound ground chicken
  • 1 egg, lightly beaten
  • 1/2 cup panko breadcrumbs
  • 2 stalks celery, very finely minced
  • 1/2 teaspoon garlic powder
  • 1/3 cup buffalo hot sauce
  • 1 tablespoon melted butter


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the ground chicken, egg, breadcrumbs, minced celery, and garlic powder until just combined; do not overmix.
  3. Roll the mixture into small, golf-ball-sized meatballs and arrange them on the baking sheet.
  4. Bake for 15 to 18 minutes until the internal temperature reaches 165°F.
  5. While the meatballs bake, whisk together the buffalo sauce and melted butter in a large bowl.
  6. Toss the hot meatballs in the sauce until fully glazed.
