Description

A quick and healthy recipe for making noodles out of butternut squash, perfect as a low-carb alternative to pasta.


Ingredients

  • 1 medium butternut squash (about 2-3 lbs), peeled, seeded
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/2 tsp garlic powder
  • 1/4 tsp dried thyme


Instructions

  1. Prepare the butternut squash: Using a spiralizer, create “noodles” from the peeled and seeded butternut squash. If you don’t have a spiralizer, you can use a vegetable peeler to make wide ribbons, then slice them into thinner strips.
  2. In a large bowl, toss the butternut squash noodles with olive oil, salt, pepper, and any optional seasonings (garlic powder, thyme).
  3. Heat a large skillet over medium-high heat. Add the seasoned butternut squash noodles to the hot skillet.
  4. Sauté for 5-8 minutes, stirring frequently, until the noodles are tender-crisp. Be careful not to overcook them, or they will become mushy.
  5. Serve immediately as a side dish or as a base for your favorite sauce.

Notes

  • For a firmer noodle, sauté for a shorter amount of time.
  • For a softer noodle, sauté for a longer amount of time.
  • Butternut squash noodles can be a great base for many different sauces, such as marinara, pesto, or alfredo.
