Description
A quick and healthy recipe for making noodles out of butternut squash, perfect as a low-carb alternative to pasta.
Ingredients
- 1 medium butternut squash (about 2-3 lbs), peeled, seeded
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: 1/2 tsp garlic powder
- 1/4 tsp dried thyme
Instructions
- Prepare the butternut squash: Using a spiralizer, create “noodles” from the peeled and seeded butternut squash. If you don’t have a spiralizer, you can use a vegetable peeler to make wide ribbons, then slice them into thinner strips.
- In a large bowl, toss the butternut squash noodles with olive oil, salt, pepper, and any optional seasonings (garlic powder, thyme).
- Heat a large skillet over medium-high heat. Add the seasoned butternut squash noodles to the hot skillet.
- Sauté for 5-8 minutes, stirring frequently, until the noodles are tender-crisp. Be careful not to overcook them, or they will become mushy.
- Serve immediately as a side dish or as a base for your favorite sauce.
Notes
- For a firmer noodle, sauté for a shorter amount of time.
- For a softer noodle, sauté for a longer amount of time.
- Butternut squash noodles can be a great base for many different sauces, such as marinara, pesto, or alfredo.
