Description
A refreshing and flavorful Caprese Pasta Salad featuring pasta, cherry tomatoes, mozzarella pearls, and fresh basil, tossed in a simple balsamic vinaigrette.
Ingredients
- 8 ounces fusilli or other short pasta
- 1 pint cherry tomatoes, halved
- 8 ounces fresh mozzarella pearls
- ½ cup fresh basil leaves, chiffonade (thinly sliced)
- For the dressing:
- ¼ cup extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 clove garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cook the pasta according to package directions until al dente.
- Drain the pasta and rinse with cold water to cool it down and stop the cooking process.
- In a large serving bowl, combine the cooled pasta, halved cherry tomatoes, and mozzarella pearls.
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the dressing.
- Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
- Just before serving, gently stir in the sliced fresh basil.
- This salad can be served immediately or chilled in the refrigerator for at least 30 minutes to allow the flavors to meld.
Notes
- For a richer flavor, you can add a teaspoon of Dijon mustard to the dressing.
- If fresh basil is not available, you can use 1 tablespoon of dried basil, but fresh is highly recommended for the best taste.
- Feel free to add other ingredients like grilled chicken, avocado, or red onion for variations.
