Description

A refreshing and flavorful Caprese Pasta Salad featuring pasta, cherry tomatoes, mozzarella pearls, and fresh basil, tossed in a simple balsamic vinaigrette.


Ingredients

  • 8 ounces fusilli or other short pasta
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella pearls
  • ½ cup fresh basil leaves, chiffonade (thinly sliced)
  • For the dressing:
  • ¼ cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Cook the pasta according to package directions until al dente.
  2. Drain the pasta and rinse with cold water to cool it down and stop the cooking process.
  3. In a large serving bowl, combine the cooled pasta, halved cherry tomatoes, and mozzarella pearls.
  4. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the dressing.
  5. Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
  6. Just before serving, gently stir in the sliced fresh basil.
  7. This salad can be served immediately or chilled in the refrigerator for at least 30 minutes to allow the flavors to meld.

Notes

  • For a richer flavor, you can add a teaspoon of Dijon mustard to the dressing.
  • If fresh basil is not available, you can use 1 tablespoon of dried basil, but fresh is highly recommended for the best taste.
  • Feel free to add other ingredients like grilled chicken, avocado, or red onion for variations.
