Description
A simple and elegant Caprese skewers salad featuring fresh tomatoes, mozzarella, and basil, drizzled with olive oil and balsamic glaze.
Ingredients
- 1 pint cherry or grape tomatoes
- 8 ounces fresh mozzarella pearls (or a block cut into ½-inch cubes)
- 1 large bunch of fresh basil leaves
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic glaze
- Flaky sea salt and freshly ground black pepper
- About 20-25 small wooden skewers
Instructions
- To assemble the skewers, thread one cherry tomato onto a skewer.
- Fold a fresh basil leaf in half and thread it on next.
- Follow with a mozzarella pearl.
- Repeat the pattern one more time with a tomato, basil leaf, and mozzarella pearl so that each skewer has two sets of the ingredients.
- Arrange the completed skewers on a serving platter.
- Just before serving, drizzle the skewers evenly with the extra-virgin olive oil and the balsamic glaze.
- Sprinkle lightly with flaky sea salt and freshly ground black pepper.
- Serve immediately as an appetizer or a light snack.
Notes
- Ensure basil leaves are large enough to be folded and threaded onto the skewer.
- Adjust the amount of olive oil and balsamic glaze to your preference.
- These skewers are best served fresh.
