Crispy and cheesy broccoli fritters made with steamed broccoli florets, cheddar and mozzarella cheese, and seasoned with herbs and spices, perfect as a snack or side dish.
Ingredients
- 4 cups broccoli florets, steamed and finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- Pinch of black pepper
- Cooking oil, for frying
Instructions
- Steam the broccoli florets until they are tender-crisp (about 4-5 minutes). Drain any excess water thoroughly and finely chop them into small pieces.
- In a spacious mixing bowl, combine the chopped broccoli, shredded cheddar cheese, shredded mozzarella cheese, all-purpose flour, beaten eggs, dried oregano, paprika, salt, and black pepper.
- Mix all the ingredients until they are thoroughly combined, forming a cohesive batter.
- Heat a generous amount of cooking oil in a large skillet or frying pan over medium heat.
- Once the oil is hot, spoon portions of the broccoli mixture into the pan, gently flattening each dollop to create fritter patties.
- Cook the fritters for a few minutes on each side until they are beautifully golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil. Serve immediately, perhaps with your favorite dipping sauce.
