Description

Crispy and cheesy broccoli fritters made with steamed broccoli florets, cheddar and mozzarella cheese, and seasoned with herbs and spices, perfect as a snack or side dish.

Ingredients

  • 4 cups broccoli florets, steamed and finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/2 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • Pinch of black pepper
  • Cooking oil, for frying

Instructions

  1. Steam the broccoli florets until they are tender-crisp (about 4-5 minutes). Drain any excess water thoroughly and finely chop them into small pieces.
  2. In a spacious mixing bowl, combine the chopped broccoli, shredded cheddar cheese, shredded mozzarella cheese, all-purpose flour, beaten eggs, dried oregano, paprika, salt, and black pepper.
  3. Mix all the ingredients until they are thoroughly combined, forming a cohesive batter.
  4. Heat a generous amount of cooking oil in a large skillet or frying pan over medium heat.
  5. Once the oil is hot, spoon portions of the broccoli mixture into the pan, gently flattening each dollop to create fritter patties.
  6. Cook the fritters for a few minutes on each side until they are beautifully golden brown and crispy.
  7. Transfer the cooked fritters to a plate lined with paper towels to absorb any excess oil. Serve immediately, perhaps with your favorite dipping sauce.

Notes

  • Ensure the broccoli is well-drained to prevent soggy fritters.
  • Adjust seasoning to taste if needed.
  • These fritters are best served hot.
