Description
No-bake healthy snacks made with Medjool dates, walnuts, chocolate protein powder, and cocoa for a protein-packed, chocolatey treat.
Ingredients
- 1 1/2 cups Medjool dates, pitted
- 1/2 cup raw walnuts
- 1/4 cup chocolate protein powder
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon water (if needed)
- A pinch of sea salt
Instructions
- If your dates are somewhat firm, soak them in warm water for 10 minutes to soften, then drain well and pat dry.
- Place the walnuts in a food processor and pulse until they are finely crumbled, but not yet a paste.
- Add the pitted dates, protein powder, cocoa powder, and sea salt to the processor.
- Pulse the mixture until it begins to clump together into a sticky, dark dough. If it remains crumbly, add a teaspoon of water at a time until the desired consistency is reached.
- Roll the dough into bite-sized balls using your hands. For a more professional finish, you can roll the finished balls in extra cocoa powder or shredded coconut.
- Chill the bites in the refrigerator for 30 minutes to set. They are best served cold and can be stored in the freezer for up to a month.
