Description

No-bake healthy snacks made with Medjool dates, walnuts, chocolate protein powder, and cocoa for a protein-packed, chocolatey treat.


Ingredients

  • 1 1/2 cups Medjool dates, pitted
  • 1/2 cup raw walnuts
  • 1/4 cup chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon water (if needed)
  • A pinch of sea salt


Instructions

  1. If your dates are somewhat firm, soak them in warm water for 10 minutes to soften, then drain well and pat dry.
  2. Place the walnuts in a food processor and pulse until they are finely crumbled, but not yet a paste.
  3. Add the pitted dates, protein powder, cocoa powder, and sea salt to the processor.
  4. Pulse the mixture until it begins to clump together into a sticky, dark dough. If it remains crumbly, add a teaspoon of water at a time until the desired consistency is reached.
  5. Roll the dough into bite-sized balls using your hands. For a more professional finish, you can roll the finished balls in extra cocoa powder or shredded coconut.
  6. Chill the bites in the refrigerator for 30 minutes to set. They are best served cold and can be stored in the freezer for up to a month.
