Description

A festive and colorful Christmas Salad featuring mixed greens, bright pomegranate arils, crumbled feta cheese, and optional candied nuts, all tossed in a simple balsamic vinaigrette.


Ingredients

  • 1 bag (5 oz) mixed greens or spinach
  • 1/2 cup pomegranate arils
  • 1/4 cup crumbled feta cheese
  • 1/4 cup candied pecans or walnuts (optional)
  • For the dressing:
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar (or red wine vinegar)
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • Salt and black pepper to taste


Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, maple syrup, salt, and pepper to make the dressing.
  2. In a large serving bowl, combine the mixed greens, pomegranate arils, crumbled feta cheese, and candied pecans (if using).
