A festive and colorful Christmas Salad featuring mixed greens, bright pomegranate arils, crumbled feta cheese, and optional candied nuts, all tossed in a simple balsamic vinaigrette.
Ingredients
- 1 bag (5 oz) mixed greens or spinach
- 1/2 cup pomegranate arils
- 1/4 cup crumbled feta cheese
- 1/4 cup candied pecans or walnuts (optional)
- For the dressing:
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar (or red wine vinegar)
- 1 tsp Dijon mustard
- 1 tsp maple syrup or honey
- Salt and black pepper to taste
Instructions
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, maple syrup, salt, and pepper to make the dressing.
- In a large serving bowl, combine the mixed greens, pomegranate arils, crumbled feta cheese, and candied pecans (if using).
- Drizzle the dressing over the salad just before serving.
