Description

Juicy and zesty Cilantro Lime Chicken made with real ingredients, ready in under 30 minutes. Perfect for tacos, bowls, or healthy dinners.


Ingredients

4 boneless, skinless chicken breasts (~ lb)

3 Tbsp olive oil (for marinade)

1 Tbsp olive oil (for cooking)

2 Tbsp fresh lime juice

1 tsp lime zest

1 Tbsp minced garlic

1 tsp honey

1 tsp salt

½ tsp ground cumin

¼ tsp black pepper

2 Tbsp chopped fresh cilantro

Extra cilantro leaves (for garnish)

Lime wedges (for serving)


Instructions

1. In a large bowl, mix olive oil, lime juice, zest, garlic, honey, salt, cumin, pepper, and chopped cilantro.

2. Add chicken breasts and coat well. Cover and refrigerate for 30 minutes to 2 hours.

3. Heat 1 Tbsp olive oil in a skillet over medium-high heat.

4. Cook chicken for 5–6 minutes per side until golden and internal temp reaches 165°F.

5. Remove from heat, rest for 5 minutes, then garnish with cilantro and lime wedges.

6. Serve with rice, veggies, or use in tacos and bowls.


Notes

Do not marinate for more than 2 hours to avoid mushy texture.

For extra juicy results, use boneless chicken thighs.
