Ingredients
- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 1/2 cups corn (fresh or frozen)
- 1 pint cherry tomatoes, quartered
- 1 bell pepper, finely diced
- 1/2 red onion, finely diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Italian dressing
- 2 tablespoons lime juice
Instructions
- In a large mixing bowl, combine the black beans, black-eyed peas, corn, tomatoes, bell pepper, and red onion.
- In a small jar, whisk together the Italian dressing and fresh lime juice.
- Pour the dressing over the bean mixture and toss gently to coat.
- Carefully fold in the diced avocado and cilantro right before serving to keep the avocado from browning.
- Serve with sturdy tortilla chips.
