Description

A vibrant, no-cook bean salad known as Cowboy Caviar, featuring fresh vegetables, beans, and a zesty dressing, perfect as a dip or side dish.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can black-eyed peas, drained and rinsed
  • 1 1/2 cups corn (fresh or frozen)
  • 1 pint cherry tomatoes, quartered
  • 1 bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Italian dressing
  • 2 tablespoons lime juice


Instructions

  1. In a large mixing bowl, combine the black beans, black-eyed peas, corn, tomatoes, bell pepper, and red onion.
  2. In a small jar, whisk together the Italian dressing and fresh lime juice.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Carefully fold in the diced avocado and cilantro right before serving to keep the avocado from browning.
  5. Serve with sturdy tortilla chips.
