Description

A classic and comforting meatloaf recipe, perfect for a family dinner.


Ingredients

  • 2 pounds ground beef (80/20 lean to fat ratio)
  • 1 cup plain breadcrumbs
  • 1 large yellow onion, finely chopped
  • 2 large eggs, lightly beaten
  • ⅔ cup whole milk
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For the glaze:
  • ½ cup ketchup
  • ¼ cup packed light brown sugar
  • 1 tablespoon apple cider vinegar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, prepare the glaze by whisking together the ½ cup of ketchup, brown sugar, and apple cider vinegar; set aside.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, beaten eggs, milk, 2 tablespoons of ketchup, Worcestershire sauce, parsley, salt, and pepper.
  4. Use your hands to gently mix all the ingredients until they are just combined, being careful not to overwork the meat.
  5. Shape the mixture into a loaf shape (approximately 9×5 inches) and place it in a lightly greased baking dish or on a foil-lined baking sheet.
  6. Spread half of the prepared glaze evenly over the top and sides of the meatloaf.
  7. Bake for 40 minutes.
  8. Remove the meatloaf from the oven, spread the remaining glaze over the top, and return it to the oven to bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes before slicing and serving.
