A copycat recipe for Longhorn Steakhouse’s Parmesan Crusted Chicken, featuring marinated chicken breasts topped with a ranch-Parmesan mixture, melted provolone cheese, and crispy Panko breadcrumbs, broiled for a golden finish.
Ingredients
- 2 large boneless, skinless chicken breasts (or 4 cutlets), pounded to ½-inch thickness
- ¼ cup ranch dressing
- ¼ cup Italian dressing
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried basil
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- For the Parmesan Topping: 2.5 ounces shredded Parmesan cheese
- ½ cup ranch dressing
- 2 slices provolone cheese, torn
- For the Crispy Crumb Mixture: 1 cup Italian-style Panko breadcrumbs
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons melted butter
Instructions
- If using full chicken breasts, slice them into fillets or pound them to a uniform ½-inch thickness.
- In a bowl, combine ¼ cup ranch dressing, Italian dressing, 1 tsp garlic powder, 1 tsp onion powder, dried basil, and black pepper. Marinate the chicken in this mixture for at least 30 minutes, or ideally overnight in the refrigerator.
- Prepare the Parmesan topping: In a small bowl, mix the shredded Parmesan cheese with ½ cup ranch dressing. Set aside.
- Prepare the crispy crumb mixture: In another small bowl, combine the Italian Panko breadcrumbs, grated Parmesan cheese, and melted butter. Set aside.
- Heat the olive oil and 1 tablespoon butter in a large skillet over medium heat. Cook the marinated chicken for 4-5 minutes per side, or until fully cooked through and a nice golden crust forms. Transfer the cooked chicken to an oven-safe dish.
- Preheat your oven broiler to a low setting (around 450°F / 230°C).
- Evenly spread the ranch-Parmesan topping over each chicken breast. Layer the torn provolone cheese on top of the ranch mixture.
- Broil the chicken for approximately 3-5 minutes, watching closely, until the cheeses begin to melt and bubble.
- Remove from the broiler, then sprinkle the crispy breadcrumb mixture generously over the melted cheese. Return to the broiler for another 2-4 minutes, or until the breadcrumbs are golden brown and toasted.
