Description

A delicious and comforting Cranberry Apple Crisp, perfect for a cozy dessert.


Ingredients

  • 2 cups gluten-free rolled oats
  • 1/2 cup coarsely chopped walnuts
  • 1/2 cup coarsely chopped blanched almonds
  • 2 tsps flaky sea salt
  • 2/3 cups raw honey or maple syrup
  • 1/3 cup ghee or unrefined coconut oil, melted
  • For The Filling:
  • juice and zest of 1 large fresh orange
  • 8 large apples of choice, peeled, cored, and chopped into 1/2-inch cubes
  • 1-1/2 cups fresh cranberries
  • 1/3 cup honey or maple syrup
  • 2 Tbsps gluten-free flour or Arrowroot powder
  • 2 tsps ground cinnamon


Instructions

  1. Preheat your oven to 350 degrees F. and lightly grease a 9 x 13-inch baking dish with ghee or coconut oil.
  2. Place your freshly squeezed orange juice into a large bowl.
  3. Slice 2-3 apples and quickly toss them in your orange juice. Repeat with remaining apples, slicing them in small batches to prevent them from browning.
  4. Once all the apples are prepared, add the remaining filling ingredients to your bowl. Stir everything really well to combine.
  5. Transfer the apple-cranberry mixture into your prepared baking dish using a spatula to get all the goodness into the dish. Level it all out into an even layer and cover with parchment or aluminum foil. Bake for 20-25 minutes, stirring halfway.
  6. Meanwhile, in a medium bowl, stir the oats, walnuts, almonds, salt, honey/maple syrup, and ghee/coconut oil. Stir very well until every piece is lightly coated.
  7. Once the baking time for your filling is up, carefully remove the dish from the oven.
  8. Give the filling a good stir, then evenly sprinkle it with your oat topping.
  9. Return to the oven and bake for about 20-25 minutes uncovered, or until the crumble is lightly golden and bubbly on the sides. Keep an eye on it so that it doesn’t burn.
