Description

A delicious and easy creamy salmon pasta recipe, perfect for a weeknight meal or special occasion.


Ingredients

  • 8 oz (about 225g) pasta of choice (fettuccine, linguine, or penne work well)
  • 2 salmon fillets (about 6 oz each), skin removed
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: 1 cup baby spinach


Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining. Set aside.
  2. While pasta cooks, season salmon fillets generously with salt and pepper.
  3. Heat 1 tbsp olive oil in a large skillet over medium heat. Add salmon fillets and cook for 4-5 minutes per side, or until cooked through and flaky. Remove salmon from the skillet, flake it into large pieces with a fork, and set aside.
  4. In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  5. Pour in the white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until slightly reduced.
  6. Reduce heat to low, then stir in the heavy cream and bring to a gentle simmer. Cook for 2 minutes, stirring occasionally.
  7. Stir in the Parmesan cheese, chopped dill, and lemon juice. Season with salt and pepper to taste.
  8. If using, stir in the baby spinach until wilted, about 1-2 minutes.
  9. Add the cooked and drained pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
  10. Gently fold in the flaked salmon.
  11. Serve immediately, garnished with extra Parmesan cheese and fresh dill if desired.

Notes

  • Using fresh dill will provide a more vibrant flavor.
  • Adjust lemon juice and seasonings to your personal preference.
  • If you don’t have white wine, chicken broth is a good substitute.
