Description
A delicious and easy creamy salmon pasta recipe, perfect for a weeknight meal or special occasion.
Ingredients
- 8 oz (about 225g) pasta of choice (fettuccine, linguine, or penne work well)
- 2 salmon fillets (about 6 oz each), skin removed
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup fresh dill, chopped (or 1 tsp dried dill)
- 1 tbsp lemon juice
- Salt and freshly ground black pepper to taste
- Optional: 1 cup baby spinach
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining. Set aside.
- While pasta cooks, season salmon fillets generously with salt and pepper.
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add salmon fillets and cook for 4-5 minutes per side, or until cooked through and flaky. Remove salmon from the skillet, flake it into large pieces with a fork, and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in the white wine (or chicken broth) and bring to a simmer, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until slightly reduced.
- Reduce heat to low, then stir in the heavy cream and bring to a gentle simmer. Cook for 2 minutes, stirring occasionally.
- Stir in the Parmesan cheese, chopped dill, and lemon juice. Season with salt and pepper to taste.
- If using, stir in the baby spinach until wilted, about 1-2 minutes.
- Add the cooked and drained pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
- Gently fold in the flaked salmon.
- Serve immediately, garnished with extra Parmesan cheese and fresh dill if desired.
Notes
- Using fresh dill will provide a more vibrant flavor.
- Adjust lemon juice and seasonings to your personal preference.
- If you don’t have white wine, chicken broth is a good substitute.
