Description

A hearty and comforting Creamy Sausage Tortellini Soup, packed with Italian sausage, cheese tortellini, and fresh spinach in a rich, savory broth.


Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage (mild or hot), casing removed
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and black pepper to taste
  • 1 (9 oz) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese (for serving)


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  2. Add chopped onion to the pot and sauté for 5 minutes until softened.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Pour in chicken broth and diced tomatoes (with their liquid). Stir in dried oregano and dried basil. Bring the soup to a simmer.
  5. Add the cheese tortellini and cook according to package directions, usually 3-5 minutes, or until tender.
  6. Reduce heat to low. Stir in the heavy cream and chopped fresh spinach. Cook for 2-3 minutes, until spinach is wilted and soup is heated through. Do not boil after adding cream.
  7. Taste and adjust seasonings with salt and black pepper as needed.
  8. Ladle into bowls and serve warm, garnished with grated Parmesan cheese.

Notes

  • Do not boil the soup after adding the heavy cream to prevent it from curdling.
  • Adjust the spice level by choosing mild or hot Italian sausage.
  • Feel free to add other vegetables like carrots or celery along with the onion.
