Description
A hearty and comforting Creamy Sausage Tortellini Soup, packed with Italian sausage, cheese tortellini, and fresh spinach in a rich, savory broth.
Ingredients
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot), casing removed
- 1 cup chopped yellow onion
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried oregano
- 1/2 tsp dried basil
- Salt and black pepper to taste
- 1 (9 oz) package refrigerated cheese tortellini
- 1/2 cup heavy cream
- 2 cups fresh spinach, chopped
- 1/4 cup grated Parmesan cheese (for serving)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
- Add chopped onion to the pot and sauté for 5 minutes until softened.
- Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and diced tomatoes (with their liquid). Stir in dried oregano and dried basil. Bring the soup to a simmer.
- Add the cheese tortellini and cook according to package directions, usually 3-5 minutes, or until tender.
- Reduce heat to low. Stir in the heavy cream and chopped fresh spinach. Cook for 2-3 minutes, until spinach is wilted and soup is heated through. Do not boil after adding cream.
- Taste and adjust seasonings with salt and black pepper as needed.
- Ladle into bowls and serve warm, garnished with grated Parmesan cheese.
Notes
- Do not boil the soup after adding the heavy cream to prevent it from curdling.
- Adjust the spice level by choosing mild or hot Italian sausage.
- Feel free to add other vegetables like carrots or celery along with the onion.
