Ingredients
- ½ cup unsalted butter melted
- 1 cup white sugar
- 1 ¼ cups all-purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 tsp vanilla extract
- 1 large egg
- ¾ cup buttermilk
- 4 cups sliced peaches
- ¾ cup white sugar
- 1 teaspoon cinnamon
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice or water
- 1 tablespoon white sugar (for optional topping)
Instructions
- Heat the oven to 350F degrees.
- Vanilla Cake Layer: Pour the butter into the bottom of a 9×13 inch baking pan.
- In a medium bowl whisk together the sugar, flour, baking powder, & salt.
- Stir in the vanilla extract, egg & buttermilk.
- Spoon/pour the batter into the pan. Try to avoid too much butter pooling around the edges.
- Peach Layer: In a large bowl toss together the sliced peaches, 3/4 cup sugar, cinnamon, cornstarch & lemon juice.
- Spoon the peaches on top of the cake layer. Do not mix.
- Bake the cobbler for 35-45 minutes, or until the top is golden brown.
- Remove from the oven, and optionally sprinkle the top with 1 more tablespoon of white sugar.
- Serve with vanilla ice cream.
