Description

Ingredients

  • 2 pounds lean ground beef
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (4 ounce) can diced green chiles
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, chopped onions, jalapeños


Instructions

  1. In a large skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned. Drain off any excess grease.
  2. Add the minced garlic and cook for one minute more.
  3. Transfer the beef mixture to a 6-quart slow cooker.
  4. Add the crushed tomatoes, diced tomatoes, kidney beans, pinto beans, and green chiles to the slow cooker.
  5. Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper.
  6. Stir everything together until well combined.
  7. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Before serving, stir the chili well. Taste and adjust seasonings if necessary.
  9. Serve hot with your favorite toppings like shredded cheese and sour cream.
