Ingredients
- 2 pounds lean ground beef
- 1 large yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (4 ounce) can diced green chiles
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: shredded cheese, sour cream, chopped onions, jalapeños
Instructions
- In a large skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned. Drain off any excess grease.
- Add the minced garlic and cook for one minute more.
- Transfer the beef mixture to a 6-quart slow cooker.
- Add the crushed tomatoes, diced tomatoes, kidney beans, pinto beans, and green chiles to the slow cooker.
- Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper.
- Stir everything together until well combined.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, stir the chili well. Taste and adjust seasonings if necessary.
- Serve hot with your favorite toppings like shredded cheese and sour cream.
