A comforting and creamy crockpot recipe featuring tender chicken, fresh broccoli, and a rich cheddar cheese sauce.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 2 cups fresh broccoli florets
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
Instructions
- In the bottom of the crockpot, place the chicken breasts and season with garlic powder, onion powder, salt, and black pepper.
- Pour the chicken broth and heavy cream over the chicken. Drizzle with olive oil and add the Dijon mustard.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- About 30 minutes before serving, add the broccoli florets to the crockpot. Stir gently to combine.
- Once the chicken is cooked, shred it using two forks directly in the crockpot.
- Stir in the shredded cheddar cheese and grated Parmesan cheese until melted and creamy.
- Serve warm, garnished with additional cheese if desired.
Notes
- For added flavor, toss in some cooked bacon bits or sautéed onions before serving.
- You can substitute the broccoli with other vegetables like cauliflower or spinach for a different twist.
