Description
Een romige en hartige Crockpot Ham and Potato Soup, perfect voor een comfortabele maaltijd.
Ingredients
- 2 cups cooked ham, diced
- 4 cups chicken broth
- 4 cups diced potatoes (Yukon gold or red)
- 1 cup diced carrots
- 1 cup diced celery
- 1/2 cup chopped onion
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 cup cornstarch (optional, for thickening)
- 1/2 cup cold water (if using cornstarch)
- 1 cup heavy cream or milk
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- In a 6-quart or larger slow cooker, combine the diced ham, potatoes, carrots, celery, onion, chicken broth, dried thyme, and black pepper.
- Stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- If you prefer a thicker soup, in a small bowl, whisk together the cornstarch and cold water until smooth. Stir the mixture into the soup during the last 30 minutes of cooking.
- Stir in the heavy cream or milk during the last 15 minutes of cooking. Heat through, but do not boil.
- Taste and adjust seasonings if necessary.
- Ladle into bowls, garnish with fresh parsley, and serve warm.
Notes
- Gebruik Yukon Gold of rode aardappelen voor de beste textuur.
- Pas de hoeveelheid kruiden aan naar smaak.
- Zorg ervoor dat de soep niet kookt nadat de room is toegevoegd om schiften te voorkomen.
