A simple and healthy flatbread recipe using just two main ingredients: cottage cheese and eggs. It’s gluten-free, low-carb, and perfect for a quick snack or base for toppings.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- Seasoning to taste (e.g., garlic powder, Italian seasoning, optional)
- Cooking spray or a small amount of oil for the parchment paper
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly mist it with cooking spray or rub with a tiny bit of oil to prevent sticking.
- Combine the cottage cheese, eggs, and any desired seasonings (such as garlic powder or Italian seasoning) in a food processor or blender.
- Process the mixture for about 30 seconds, or until it reaches a smooth and creamy consistency. An immersion blender or NutriBullet can also be used.
- Pour the blended mixture onto the prepared baking sheet, spreading it out evenly into a thin layer.
- Bake in the preheated oven for 25-35 minutes, or until the flatbread turns golden brown and is cooked through.
- Once baked, remove the flatbread from the oven and allow it to cool on the baking sheet for a few minutes before serving.
