Description

A creamy and flavorful no-bake dip featuring cream cheese, sour cream, ranch seasoning, fire-roasted corn, Rotel tomatoes and chilies, green chiles, and cheddar cheese. It’s perfect for parties, served with chips or fresh vegetables after chilling to blend the flavors.


Ingredients

  • 8 oz cream cheese, softened
  • 16 oz sour cream
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 can (15 oz) fire-roasted corn, well-drained
  • 1 can (10 oz) Rotel (diced tomatoes and green chilies), well-drained
  • 1 can (4 oz) diced green chiles, well-drained
  • 8 oz shredded cheddar cheese


Instructions

  1. In a large mixing bowl, thoroughly whip the softened cream cheese until it is smooth and creamy.
  2. To the whipped cream cheese, add the sour cream, the packet of ranch seasoning mix, the drained fire-roasted corn, the drained Rotel tomatoes and chilies, the drained diced green chiles, and the shredded cheddar cheese.
  3. Stir all ingredients together vigorously until everything is well combined and evenly distributed.
  4. Cover the bowl and refrigerate the dip for a minimum of 2-3 hours. This chilling time allows the flavors to meld beautifully.
  5. Before serving, give the dip another good stir and enjoy with your favorite chips or fresh vegetables.

Notes

  • Ensure all canned ingredients are well-drained to prevent the dip from becoming watery.
  • This dip can be made ahead and stored in the refrigerator for up to 3-4 days.
  • For a spicier version, use hot Rotel or add extra green chiles.
