Description
A creamy and flavorful no-bake dip featuring cream cheese, sour cream, ranch seasoning, fire-roasted corn, Rotel tomatoes and chilies, green chiles, and cheddar cheese. It’s perfect for parties, served with chips or fresh vegetables after chilling to blend the flavors.
Ingredients
- 8 oz cream cheese, softened
- 16 oz sour cream
- 1 packet (1 oz) dry ranch seasoning mix
- 1 can (15 oz) fire-roasted corn, well-drained
- 1 can (10 oz) Rotel (diced tomatoes and green chilies), well-drained
- 1 can (4 oz) diced green chiles, well-drained
- 8 oz shredded cheddar cheese
Instructions
- In a large mixing bowl, thoroughly whip the softened cream cheese until it is smooth and creamy.
- To the whipped cream cheese, add the sour cream, the packet of ranch seasoning mix, the drained fire-roasted corn, the drained Rotel tomatoes and chilies, the drained diced green chiles, and the shredded cheddar cheese.
- Stir all ingredients together vigorously until everything is well combined and evenly distributed.
- Cover the bowl and refrigerate the dip for a minimum of 2-3 hours. This chilling time allows the flavors to meld beautifully.
- Before serving, give the dip another good stir and enjoy with your favorite chips or fresh vegetables.
Notes
- Ensure all canned ingredients are well-drained to prevent the dip from becoming watery.
- This dip can be made ahead and stored in the refrigerator for up to 3-4 days.
- For a spicier version, use hot Rotel or add extra green chiles.
