Description

An easy recipe for making classic Buckeye candies, which are peanut butter balls partially dipped in chocolate to resemble the nut from the Ohio Buckeye tree.


Ingredients

  • 1.5 cups creamy peanut butter
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3.5 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening (like Crisco) or coconut oil


Instructions

  1. In a large bowl, beat together the peanut butter, softened butter, powdered sugar, and vanilla extract until well combined and a firm dough forms.
  2. Roll the peanut butter mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  3. Insert a toothpick into the top of each ball (this will be for dipping later).
  4. Refrigerate the peanut butter balls for at least 30 minutes, or freeze for 15 minutes, until firm.
  5. In a microwave-safe bowl, combine the chocolate chips and shortening. Microwave in 30-second intervals, stirring after each, until smooth and melted (be careful not to overheat).
  6. Holding each chilled peanut butter ball by the toothpick, dip it into the melted chocolate, leaving a small circle of peanut butter visible at the top.
  7. Place the dipped buckeyes back on the parchment-lined baking sheet. Carefully remove the toothpick and smooth over the hole if desired.
  8. Refrigerate until the chocolate is set. Store in an airtight container in the refrigerator.

Notes

  • Using shortening helps the chocolate coating set smoothly. Coconut oil is an alternative.
  • Ensure the peanut butter balls are thoroughly chilled before dipping for the best results.
  • For a smoother chocolate coating, temper the chocolate, though microwaving as described is faster for this simple recipe.
