Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cups beef broth
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup all-purpose flour
- 1/4 cup butter
- Salt and pepper to taste
- Optional toppings: cooked bacon pieces, chopped fresh parsley, croutons
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add chopped onion, carrots, and celery to the pot. Cook until vegetables are softened, about 5-7 minutes.
- Stir in the flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the beef broth and milk until smooth. Bring the soup to a simmer, stirring occasionally.
- Reduce heat to low, cover, and let simmer for at least 15-20 minutes to allow flavors to meld.
- Stir in the shredded cheddar and Monterey Jack cheeses until melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with optional toppings like bacon, parsley, or croutons.

- For a thicker soup, you can mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir it into the simmering soup until thickened.
