Description

A refreshing and easy cucumber onion salad featuring thinly sliced cucumbers and red onions in a tangy apple cider vinegar dressing, perfect for a quick side dish.


Ingredients

  • 2 medium cucumbers
  • 1 medium red onion, thinly sliced
  • 1/3 cup apple cider vinegar
  • 1/4 cup water
  • 1 tbsp granulated sugar
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper


Instructions

  1. Thinly slice the cucumbers into ΒΌ-inch rounds. If using standard cucumbers with thick skins, you may peel them first.
  2. Slice the red onion into delicate half-moons. Combine the sliced cucumbers and red onion in a large mixing bowl.
  3. In a separate small bowl or jar, whisk together the apple cider vinegar, water, granulated sugar, fine sea salt, and ground black pepper to create the dressing.
  4. Pour the prepared dressing over the cucumber and onion mixture and toss gently to ensure everything is thoroughly coated.
  5. Refrigerate the salad until it’s time to serve. Allowing it to chill for at least an hour will let the flavors meld beautifully.

Notes

  • This salad is best served chilled and can be made ahead of time.
  • For a spicier version, add a pinch of red pepper flakes to the dressing.
