Description
A quick and easy deconstructed egg roll dish featuring ground turkey, coleslaw mix, and flavorful Asian-inspired seasonings, served without the wrapper.
Ingredients
- 1 pound ground turkey
- 1 bag (14 oz) coleslaw mix (cabbage and carrots)
- 2 tablespoons sesame oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 2 green onions, sliced
- 1/2 teaspoon black pepper
- Toasted sesame seeds for garnish
Instructions
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the ground turkey to the pan and cook, breaking it apart with a wooden spoon, until it is thoroughly browned and cooked through.
- Stir in the minced garlic and grated ginger, cooking for about one minute until highly fragrant.
- Pour in the entire bag of coleslaw mix. Sauté the vegetables with the meat until the cabbage has wilted slightly but still retains a bit of crunch.
- Add the soy sauce, apple cider vinegar, and black pepper. Toss everything together for another 2 minutes so the flavors can fully integrate.
- Remove from heat and garnish with sliced green onions and a sprinkle of toasted sesame seeds before serving.
Notes
- This recipe is gluten-free if using tamari instead of soy sauce.
- Can be made with ground pork or chicken as a substitute for turkey.
- Serve over rice or cauliflower rice for a complete meal.
