Description

A quick and easy deconstructed egg roll dish featuring ground turkey, coleslaw mix, and flavorful Asian-inspired seasonings, served without the wrapper.


Ingredients

  • 1 pound ground turkey
  • 1 bag (14 oz) coleslaw mix (cabbage and carrots)
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 green onions, sliced
  • 1/2 teaspoon black pepper
  • Toasted sesame seeds for garnish


Instructions

  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the ground turkey to the pan and cook, breaking it apart with a wooden spoon, until it is thoroughly browned and cooked through.
  3. Stir in the minced garlic and grated ginger, cooking for about one minute until highly fragrant.
  4. Pour in the entire bag of coleslaw mix. Sauté the vegetables with the meat until the cabbage has wilted slightly but still retains a bit of crunch.
  5. Add the soy sauce, apple cider vinegar, and black pepper. Toss everything together for another 2 minutes so the flavors can fully integrate.
  6. Remove from heat and garnish with sliced green onions and a sprinkle of toasted sesame seeds before serving.

Notes

  • This recipe is gluten-free if using tamari instead of soy sauce.
  • Can be made with ground pork or chicken as a substitute for turkey.
  • Serve over rice or cauliflower rice for a complete meal.
