Description
Easy Grilled Chicken with Lemon is a simple and flavorful recipe featuring tender boneless chicken breasts marinated in a zesty blend of lemon juice, garlic, herbs, and oil, then grilled to juicy perfection.
Ingredients
- 4 boneless, skinless chicken breasts (butterflied or pounded to even thickness)
- 1/4 cup avocado oil (or melted coconut oil)
- 3 tablespoons minced garlic
- 1 tablespoon grated lemon zest (from 2 lemons)
- 1/3 cup fresh lemon juice
- 1 1/2 teaspoons dried oregano
- 1/2 teaspoon dried thyme
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a large bowl or a resealable plastic bag, combine the avocado oil, minced garlic, lemon zest, fresh lemon juice, dried oregano, dried thyme, sea salt, and black pepper. Mix thoroughly to create the marinade.
- Add the chicken breasts to the marinade, ensuring each piece is fully coated. Refrigerate for at least 2 hours, or ideally overnight (up to 24 hours), to allow the flavors to penetrate.
- Preheat your outdoor grill to medium-high heat. Lightly oil the grill grates.
- Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade.
- Place the chicken on the preheated grill and cook for approximately 5-7 minutes per side, flipping once, until deep grill marks appear and the chicken is cooked through with juices running clear. The internal temperature should reach 165 degrees F (74 degrees C).
- Let the grilled chicken rest for about 5 minutes before slicing and serving. This allows the juices to redistribute, keeping the chicken tender and moist.
Notes
- For best results, marinate the chicken overnight to enhance flavors.
- Ensure the grill is well-oiled to prevent sticking.
- This recipe is versatile and pairs well with salads, vegetables, or rice.
