Description

Easy Grilled Chicken with Lemon is a simple and flavorful recipe featuring tender boneless chicken breasts marinated in a zesty blend of lemon juice, garlic, herbs, and oil, then grilled to juicy perfection.


Ingredients

  • 4 boneless, skinless chicken breasts (butterflied or pounded to even thickness)
  • 1/4 cup avocado oil (or melted coconut oil)
  • 3 tablespoons minced garlic
  • 1 tablespoon grated lemon zest (from 2 lemons)
  • 1/3 cup fresh lemon juice
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. In a large bowl or a resealable plastic bag, combine the avocado oil, minced garlic, lemon zest, fresh lemon juice, dried oregano, dried thyme, sea salt, and black pepper. Mix thoroughly to create the marinade.
  2. Add the chicken breasts to the marinade, ensuring each piece is fully coated. Refrigerate for at least 2 hours, or ideally overnight (up to 24 hours), to allow the flavors to penetrate.
  3. Preheat your outdoor grill to medium-high heat. Lightly oil the grill grates.
  4. Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade.
  5. Place the chicken on the preheated grill and cook for approximately 5-7 minutes per side, flipping once, until deep grill marks appear and the chicken is cooked through with juices running clear. The internal temperature should reach 165 degrees F (74 degrees C).
  6. Let the grilled chicken rest for about 5 minutes before slicing and serving. This allows the juices to redistribute, keeping the chicken tender and moist.
