Description

A creamy, high-protein chocolate chia seed pudding that’s easy to make, blending chia seeds with cocoa, protein powder, and yogurt for a healthy, indulgent dessert.

Ingredients

  • 2 cups milk (dairy or plant-based)
  • 1/2 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1 cup plain Greek yogurt
  • 1/2 cup chia seeds
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • A pinch of salt
  • Fresh berries, whipped cream, or shaved chocolate for garnish (optional)

Instructions

  1. Combine the milk, maple syrup, vanilla extract, Greek yogurt, chia seeds, cocoa powder, chocolate protein powder, and a touch of salt in a high-speed blender.
  2. Process the mixture until it becomes completely smooth and creamy, which should take approximately 5 minutes.
  3. Divide the velvety pudding evenly among five small glass jars.
  4. Cover the jars and refrigerate them for a minimum of 2 hours, or until the pudding achieves a thick, set consistency.
  5. Before serving, enhance your pudding with fresh berries, a dollop of whipped cream, or delicate shavings of dark chocolate, if desired.

Notes

  • This recipe can be adapted for vegan diets by using plant-based milk and a dairy-free yogurt alternative.
  • Store in the refrigerator for up to 3 days.
  • Adjust sweetness by varying the maple syrup amount.
