Description

Easy Keto Buffalo Chicken Dip is a creamy, spicy, low-carb appetizer made with shredded chicken, buffalo sauce, cream cheese, sour cream, and melted cheeses, perfect for keto diets.


Ingredients

  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 8 ounces cream cheese, softened
  • ⅓ cup buffalo sauce (sugar-free for keto)
  • ¼ cup sour cream
  • 1 ½ cups shredded mozzarella cheese, divided
  • 1 ½ cups shredded cheddar cheese, divided
  • 2 large green onions, sliced (for garnish)
  • 2 tablespoons crumbled blue cheese (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish. Shred your cooked chicken and set aside.
  2. In a mixing bowl, combine the softened cream cheese, buffalo sauce, and sour cream. Mix until well blended.
  3. Gently fold in the shredded chicken, 1 cup of mozzarella cheese, 1 cup of cheddar cheese, and a handful of sliced green onions.
  4. Transfer the mixture into the prepared baking dish.
  5. Top the dip with the remaining ½ cup of mozzarella, ½ cup of cheddar cheese, and the optional crumbled blue cheese.
  6. Bake for 20-25 minutes, or until the dip is hot and bubbling, and the cheese on top is melted and slightly golden.
  7. Allow to cool briefly, then garnish with the remaining green onions before serving with your favorite keto-friendly dippers.
