Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 2/3 cup milk of your choice
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon chia seeds
  • 1/2 cup fresh blueberries
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon maple syrup
  • A pinch of sea salt


Instructions

  1. In a mason jar or a sealable glass container, combine the rolled oats, chia seeds, and a pinch of salt.
  2. Pour in the milk, Greek yogurt, lemon juice, and maple syrup. Stir the mixture vigorously to ensure the chia seeds are well-distributed and not clumping.
  3. Gently fold in the fresh blueberries and the lemon zest.
  4. Seal the container tightly and place it in the refrigerator for at least 6 hours, or ideally overnight, to allow the oats to soften and the flavors to meld.
  5. Before serving, give the oats a quick stir and top with a few extra fresh blueberries if desired.
