Ingredients
- 1/2 cup old-fashioned rolled oats
- 2/3 cup milk of your choice
- 1/4 cup plain Greek yogurt
- 1 teaspoon chia seeds
- 1/2 cup fresh blueberries
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 tablespoon maple syrup
- A pinch of sea salt
Instructions
- In a mason jar or a sealable glass container, combine the rolled oats, chia seeds, and a pinch of salt.
- Pour in the milk, Greek yogurt, lemon juice, and maple syrup. Stir the mixture vigorously to ensure the chia seeds are well-distributed and not clumping.
- Gently fold in the fresh blueberries and the lemon zest.
- Seal the container tightly and place it in the refrigerator for at least 6 hours, or ideally overnight, to allow the oats to soften and the flavors to meld.
- Before serving, give the oats a quick stir and top with a few extra fresh blueberries if desired.
