Description

A simple and flavorful lemon garlic chicken recipe featuring tender chicken breasts or thighs marinated in a zesty lemon, garlic, and herb mixture, perfect for baking in the oven or searing on the stovetop.

Ingredients

  • 4 (8-oz) boneless, skinless chicken breasts (or 2 lbs chicken thighs)
  • ¼ cup olive oil (plus 2 tbsp for stovetop method, if preferred)
  • 1 medium lemon, zested and juiced (approx. 2 tbsp juice, 1 tsp zest)
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • 2 tsp sea salt
  • ½ tsp black pepper
  • Optional: Lemon slices for garnish

Instructions

  1. In a large bowl, prepare the marinade by whisking together olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, Italian seasoning, sea salt, and black pepper.
  2. Add the chicken breasts (or thighs) to the marinade, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, or up to 24 hours, to allow the flavors to penetrate the chicken.
  3. For Oven Method: Preheat oven to 400°F (200°C). Place the marinated chicken in a single layer on a baking sheet. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Cooking time may vary based on chicken thickness.
  4. For Stovetop Method: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the marinated chicken and sear for 5-7 minutes per side, until golden brown and cooked through to an internal temperature of 165°F (74°C).
  5. Remove chicken from heat and let it rest for a few minutes before slicing or serving. Garnish with additional lemon slices and fresh parsley, if desired.

Notes

  • Ensure chicken reaches an internal temperature of 165°F (74°C) for safety.
  • Marinating longer enhances flavor, but minimum 1 hour is recommended.
  • This recipe is versatile; adjust seasoning to taste.
