Description

A simple and delicious meatloaf recipe that’s perfect for a weeknight meal.

Ingredients

  • 1.5 pounds ground beef
  • 1 cup milk
  • 1 cup dried breadcrumbs
  • 1 medium onion, finely chopped
  • 1 large egg, beaten
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • For the Topping:
  • ¼ cup ketchup
  • 2 tablespoons packed brown sugar
  • 1 teaspoon white vinegar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, milk, breadcrumbs, chopped onion, egg, 2 tablespoons of ketchup, Worcestershire sauce, salt, and pepper.
  3. Mix the ingredients together with your hands until they are just combined, being careful not to overwork the mixture.
  4. Press the meat mixture into an ungreased 9×5-inch loaf pan or shape it into a loaf on a foil-lined baking sheet.
  5. In a small bowl, stir together the topping ingredients: ¼ cup ketchup, brown sugar, and vinegar.
  6. Spread this glaze evenly over the top of the meatloaf.
  7. Bake for 55 to 65 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).
  8. Let the meatloaf stand for 10 minutes before slicing and serving to allow the juices to redistribute.

Notes

  • Do not overmix the meat mixture, as this can result in a tough meatloaf.
  • Using a meat thermometer is the most accurate way to ensure the meatloaf is cooked through.
  • Letting the meatloaf rest before slicing helps to keep it moist.
