An easy, low-carb pizza-inspired bake using cottage cheese as a creamy base, topped with mozzarella and optional pizza toppings for a quick and satisfying meal.
Ingredients
- 1.5 cups cottage cheese (full-fat, reduced-fat, or fat-free)
- 1.5 tsp Italian seasoning
- 3/4 tsp garlic powder
- 4 tbsp grated Parmesan cheese
- 1/4 cup pizza sauce
- 1/2 cup shredded mozzarella cheese, divided
- Optional toppings: pepperoni slices, chopped bell peppers, onions, black olives
Instructions
- Preheat your oven to 400°F (204°C).
- In an oven-safe bowl or baking dish (at least 16 ounces), combine the cottage cheese, Italian seasoning, garlic powder, Parmesan cheese, and pizza sauce. Mix thoroughly. If you prefer a smoother texture, you can blend or process the cottage cheese mixture before adding it to the dish.
- Stir in half of the shredded mozzarella cheese into the cottage cheese mixture.
- Top the mixture with the remaining shredded mozzarella cheese and any desired optional pizza toppings like pepperoni, peppers, or olives.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. For an extra crispy top, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
- Carefully remove from the oven and let cool slightly before enjoying.
Notes
- This recipe is naturally gluten-free and can be customized with your favorite pizza toppings.
- For a vegetarian version, omit pepperoni and use vegetable toppings.
