Description

An easy, low-carb pizza-inspired bake using cottage cheese as a creamy base, topped with mozzarella and optional pizza toppings for a quick and satisfying meal.


Ingredients

  • 1.5 cups cottage cheese (full-fat, reduced-fat, or fat-free)
  • 1.5 tsp Italian seasoning
  • 3/4 tsp garlic powder
  • 4 tbsp grated Parmesan cheese
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese, divided
  • Optional toppings: pepperoni slices, chopped bell peppers, onions, black olives


Instructions

  1. Preheat your oven to 400°F (204°C).
  2. In an oven-safe bowl or baking dish (at least 16 ounces), combine the cottage cheese, Italian seasoning, garlic powder, Parmesan cheese, and pizza sauce. Mix thoroughly. If you prefer a smoother texture, you can blend or process the cottage cheese mixture before adding it to the dish.
  3. Stir in half of the shredded mozzarella cheese into the cottage cheese mixture.
  4. Top the mixture with the remaining shredded mozzarella cheese and any desired optional pizza toppings like pepperoni, peppers, or olives.
  5. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown. For an extra crispy top, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
  6. Carefully remove from the oven and let cool slightly before enjoying.

Notes

  • This recipe is naturally gluten-free and can be customized with your favorite pizza toppings.
  • For a vegetarian version, omit pepperoni and use vegetable toppings.
