Description
Easy roasted cabbage steaks made from thick slices of green cabbage, seasoned with olive oil, garlic, and onion powder, roasted until tender and caramelized. A simple, flavorful vegan side dish.
Ingredients
- 1 large head of green cabbage
- 2-3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- Fresh lemon wedges, for serving
- Fresh chopped parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
- Prepare the cabbage: Trim the very bottom of the cabbage stem to create a stable base. Place the cabbage upright and slice it into 1-inch thick ‘steaks’, ensuring a portion of the core remains in each slice to hold it together.
- In a small bowl, whisk together the olive oil, garlic powder, onion powder, salt, and black pepper to create your seasoning mixture.
- Arrange the cabbage steaks in a single layer on the prepared baking sheet. Brush both sides of each steak generously with the oil and seasoning mixture.
- Roast for approximately 25 minutes, or until the cabbage is tender and the edges are lightly golden and caramelized.
- Remove from the oven, drizzle with fresh lemon juice, and garnish with chopped parsley if desired.
- Serve hot as a flavorful side dish or a light vegetarian main.
Notes
- This recipe is naturally gluten-free and vegan.
- For extra flavor, you can add paprika or herbs to the seasoning mix.
