Description

Easy roasted cabbage steaks made from thick slices of green cabbage, seasoned with olive oil, garlic, and onion powder, roasted until tender and caramelized. A simple, flavorful vegan side dish.


Ingredients

  • 1 large head of green cabbage
  • 2-3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Fresh lemon wedges, for serving
  • Fresh chopped parsley, for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the cabbage: Trim the very bottom of the cabbage stem to create a stable base. Place the cabbage upright and slice it into 1-inch thick ‘steaks’, ensuring a portion of the core remains in each slice to hold it together.
  3. In a small bowl, whisk together the olive oil, garlic powder, onion powder, salt, and black pepper to create your seasoning mixture.
  4. Arrange the cabbage steaks in a single layer on the prepared baking sheet. Brush both sides of each steak generously with the oil and seasoning mixture.
  5. Roast for approximately 25 minutes, or until the cabbage is tender and the edges are lightly golden and caramelized.
  6. Remove from the oven, drizzle with fresh lemon juice, and garnish with chopped parsley if desired.
  7. Serve hot as a flavorful side dish or a light vegetarian main.

Notes

  • This recipe is naturally gluten-free and vegan.
  • For extra flavor, you can add paprika or herbs to the seasoning mix.
  • Store leftovers in an airtight container in the fridge for up to 3 days; reheat in the oven.
