An easy and flavorful sheet pan shrimp recipe featuring marinated jumbo shrimp baked to perfection, served with lemon wedges for a quick, healthy meal.
Ingredients
- 2 lbs jumbo shrimp, peeled and deveined
- 3 large lemons (2 cut into wedges for serving, 1 for zest and juice)
- 1/2 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon Aleppo pepper or red pepper flakes (optional)
- Kosher salt, to taste
- Black pepper, to taste
- 3 tablespoons fresh parsley, finely chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C) and position a rack in the middle. Prepare a large sheet pan, optionally lining it with parchment paper for easier cleanup.
- In a large mixing bowl, zest one lemon and then squeeze its juice into the bowl. Add the olive oil, minced garlic, sweet paprika, dried oregano, ground coriander, ground cumin, Aleppo pepper (or red pepper flakes, if using), a generous dash of kosher salt, and black pepper. Whisk all these ingredients together to create the marinade.
- Pat the peeled and deveined shrimp thoroughly dry with paper towels. Add the shrimp to the bowl with the marinade and toss to ensure all shrimp are well coated. Let the shrimp marinate briefly while the oven preheats.
- Spread the marinated shrimp in a single layer on the prepared sheet pan. Pour any remaining sauce from the bowl over the shrimp.
- Bake for 6-9 minutes, or until the shrimp turn opaque pink and are cooked through. Be careful not to overcook them, as shrimp cook quickly.
- Once baked, remove the sheet pan from the oven. Garnish generously with finely chopped fresh parsley.
- Serve immediately with the reserved lemon wedges on the side for squeezing fresh juice over the shrimp. This dish pairs wonderfully with rice, couscous, or a fresh green salad.
