Easy Shrimp Scampi is a classic Italian-American dish featuring succulent shrimp sautéed in a garlic, white wine, and lemon butter sauce, perfect for a quick weeknight meal.
Ingredients
- 3 lbs large shrimp, peeled and deveined
- 3 tbsp olive oil
- 12 cloves garlic, finely minced
- ½ cup dry white wine
- Juice of 1 lemon (2-3 tbsp)
- 3 tbsp fresh parsley, chopped
- 1 stick (8 tbsp) unsalted butter
- Coarse salt, black pepper, and crushed red pepper flakes, to taste
Instructions
- Warm olive oil in a sizable pan over low to medium heat for about a minute. Add the minced garlic and sauté briefly, just until fragrant, for 30 to 60 seconds.
- Introduce the shrimp to the pan, stir, and cook for approximately 60 to 90 seconds until they just begin to turn pink.
- Pour in the dry white wine and continue cooking for another 60 to 90 seconds, allowing it to reduce slightly.
- Finish the dish by stirring in the fresh lemon juice, chopped parsley, unsalted butter, coarse salt, freshly ground black pepper, and crushed red pepper flakes. Mix until the butter has melted and all ingredients are well combined.
- Serve immediately, perhaps alongside crusty bread or tossed with your favorite cooked pasta.
