Description
Refreshing and easy-to-make no-cook appetizers featuring crisp cucumber rounds topped with a creamy herbed spread and smoked salmon, perfect for parties or light snacks.
Ingredients
- 2 large English cucumbers, sliced into 1/2-inch rounds
- 6 ounces smoked salmon, torn into small pieces
- 6 ounces cream cheese, softened
- 2 tablespoons sour cream
- 1 tablespoon fresh dill, finely chopped
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon cracked black pepper
- Fresh dill sprigs for garnish
Instructions
- Prepare the cucumber rounds by laying them flat on a serving platter. For a more elegant look, you can use a melon baller to slightly scoop out the center of each slice to create a shallow well.
- In a medium mixing bowl, beat together the softened cream cheese and sour cream until the mixture is light and aerated.
- Fold in the lemon zest, lemon juice, chopped dill, and black pepper until thoroughly combined.
- Place a small dollop of the herbed cream cheese mixture onto each cucumber round, or use a piping bag for a more professional finish.
- Top each bite with a piece of the smoked salmon.
- Finish the dish with a tiny sprig of fresh dill on each piece and serve chilled.
Notes
- Serve immediately for the freshest taste, or chill for up to 2 hours before serving.
- These bites are best enjoyed fresh and can be prepared in advance for easy assembly.
