Description

Ingredients

  • 2 large English cucumbers, sliced into 1/2-inch rounds
  • 6 ounces smoked salmon, torn into small pieces
  • 6 ounces cream cheese, softened
  • 2 tablespoons sour cream
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon cracked black pepper
  • Fresh dill sprigs for garnish


Instructions

  1. Prepare the cucumber rounds by laying them flat on a serving platter. For a more elegant look, you can use a melon baller to slightly scoop out the center of each slice to create a shallow well.
  2. In a medium mixing bowl, beat together the softened cream cheese and sour cream until the mixture is light and aerated.
  3. Fold in the lemon zest, lemon juice, chopped dill, and black pepper until thoroughly combined.
  4. Place a small dollop of the herbed cream cheese mixture onto each cucumber round, or use a piping bag for a more professional finish.
  5. Top each bite with a piece of the smoked salmon.
