Ingredients

  • 1 tablespoon olive oil
  • 1.5 pounds ground turkey
  • 1 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Heat the olive oil in a large Dutch oven or pot over medium-high heat.
  2. Add the ground turkey and cook, breaking it apart with a spoon, until it is no longer pink. Drain any excess liquid.
  3. Add the chopped onion and bell pepper to the pot and cook until they have softened, about 5-7 minutes.
  4. Stir in the minced garlic and cook for one minute more.
  5. Add the chili powder, cumin, and smoked paprika, and stir for 30 seconds to toast the spices.
  6. Pour in the diced tomatoes, tomato sauce, kidney beans, and black beans.
  7. Season with salt and pepper.
  8. Stir everything together until well combined.
  9. Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For a richer flavor, allow it to simmer for up to an hour.
