Ingredients
- 1 tablespoon olive oil
- 1.5 pounds ground turkey
- 1 large yellow onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat the olive oil in a large Dutch oven or pot over medium-high heat.
- Add the ground turkey and cook, breaking it apart with a spoon, until it is no longer pink. Drain any excess liquid.
- Add the chopped onion and bell pepper to the pot and cook until they have softened, about 5-7 minutes.
- Stir in the minced garlic and cook for one minute more.
- Add the chili powder, cumin, and smoked paprika, and stir for 30 seconds to toast the spices.
- Pour in the diced tomatoes, tomato sauce, kidney beans, and black beans.
- Season with salt and pepper.
- Stir everything together until well combined.
- Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, stirring occasionally. For a richer flavor, allow it to simmer for up to an hour.
- Taste and adjust seasonings as needed before serving.
- Serve hot with toppings like shredded cheese, sour cream, and cilantro.
