Description
Deliciously chewy gluten-free chocolate chip cookies that are easy to make.
Ingredients
- ½ cup salted butter
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 teaspoon pure vanilla extract
- 1 large egg
- 1 ½ cups gluten-free all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon fine sea salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
- Line 2 baking sheets with parchment paper, set aside.
- In the bowl of a standing mixer fitted with the paddle attachment, cream together butter and sugars until light and fluffy.
- Add egg and vanilla and beat until combined.
- Add gluten-free all-purpose flour, baking soda, baking powder, and salt. Beat until just combined.
- Add chocolate chips and stir until evenly distributed.
- Use a small cookie scoop to measure out 1 ½ TBS portions of dough, then roll into balls and place on prepared baking sheets at least 2” apart.
- Bake in preheated oven for 9-10 minutes, or until cookies are barely set.
Notes
- Ensure your gluten-free all-purpose flour blend contains xanthan gum, or add it if your blend does not.
- For softer cookies, bake for 9 minutes. For crispier cookies, bake for 10 minutes.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
