Description

A spooky and delicious Graveyard Chicken Enchilada Dip perfect for Halloween parties or any gathering.

Ingredients

  • 2 cups shredded pepper Jack cheese
  • 1 cup enchilada sauce
  • 1 cup shredded rotisserie chicken
  • 12 oz. cream cheese, softened
  • 1 oz. (4.5-oz.) can green chiles
  • 1 Tbsp. taco seasoning
  • 4 flour tortillas
  • Tortilla chips, for serving
  • Shredded lettuce, for serving

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine pepper jack, enchilada sauce, rotisserie chicken, cream cheese, green chilis, and taco seasoning.
  3. Transfer dip to a cast-iron skillet and bake until warmed through and bubbly, 20 to 25 minutes.
  4. Meanwhile, make tortilla graves: Cut tortillas into grave shapes and place on a baking sheet.
  5. Bake until sturdy, 5 to 7 minutes.
  6. Top dip with shredded lettuce and insert graves.
  7. Serve with tortilla chips.

Notes

  • Ensure the cream cheese is fully softened for a smoother dip.
  • You can prepare the tortilla graves ahead of time and store them in an airtight container.
  • Adjust the amount of taco seasoning to your spice preference.
