Description

A classic and creamy dessert salad featuring lime gelatin, cream cheese, crushed pineapple, marshmallows, and optional nuts, topped with whipped topping.


Ingredients

  • 1 (6 ounce) package lime flavored gelatin (Jell-O)
  • 2 cups boiling water
  • 1 (8 ounce) package cream cheese, softened
  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 cup miniature marshmallows
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 (8 ounce) container frozen whipped topping, thawed


Instructions

  1. In a large bowl, dissolve the lime gelatin in boiling water. Stir until the gelatin is completely dissolved.
  2. Add the softened cream cheese to the hot gelatin mixture, whisking until smooth and no lumps remain.
  3. Stir in the undrained crushed pineapple and miniature marshmallows. If using, add chopped pecans or walnuts.
  4. Refrigerate for at least 1 to 2 hours, or until the mixture begins to set but is still jiggly (not completely firm).
  5. Once partially set, gently fold in the thawed whipped topping until well combined.
  6. Pour the mixture into a 9×13 inch dish or a decorative bowl.
  7. Refrigerate for at least 4 hours, or preferably overnight, until completely set and firm.
  8. Serve chilled.

Notes

  • Ensure the cream cheese is fully incorporated and smooth before adding other ingredients.
  • Do not let the gelatin set completely before folding in the whipped topping, or it may not incorporate smoothly.
  • Chopped pecans or walnuts add a nice crunch if desired.
