Description
A classic and creamy dessert salad featuring lime gelatin, cream cheese, crushed pineapple, marshmallows, and optional nuts, topped with whipped topping.
Ingredients
- 1 (6 ounce) package lime flavored gelatin (Jell-O)
- 2 cups boiling water
- 1 (8 ounce) package cream cheese, softened
- 1 (20 ounce) can crushed pineapple, undrained
- 1 cup miniature marshmallows
- 1/2 cup chopped pecans or walnuts (optional)
- 1 (8 ounce) container frozen whipped topping, thawed
Instructions
- In a large bowl, dissolve the lime gelatin in boiling water. Stir until the gelatin is completely dissolved.
- Add the softened cream cheese to the hot gelatin mixture, whisking until smooth and no lumps remain.
- Stir in the undrained crushed pineapple and miniature marshmallows. If using, add chopped pecans or walnuts.
- Refrigerate for at least 1 to 2 hours, or until the mixture begins to set but is still jiggly (not completely firm).
- Once partially set, gently fold in the thawed whipped topping until well combined.
- Pour the mixture into a 9×13 inch dish or a decorative bowl.
- Refrigerate for at least 4 hours, or preferably overnight, until completely set and firm.
- Serve chilled.
Notes
- Ensure the cream cheese is fully incorporated and smooth before adding other ingredients.
- Do not let the gelatin set completely before folding in the whipped topping, or it may not incorporate smoothly.
- Chopped pecans or walnuts add a nice crunch if desired.
