Description

Juicy and flavorful grilled chicken breasts marinated in a zesty lemon and herb blend, perfect for a healthy and delicious meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 large lemon
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Place chicken breasts between two pieces of plastic wrap and pound to an even 3/4-inch thickness.
  2. In a shallow dish or resealable plastic bag, combine olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, dried oregano, salt, and pepper.
  3. Add chicken breasts to the marinade, ensuring they are well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  4. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Remove chicken from the marinade, discarding any remaining marinade.
  6. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C) and chicken is cooked through with nice grill marks.
  7. Remove chicken from the grill and let rest for 5 minutes before slicing or serving whole.
  8. Serve with your favorite sides.
