Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Juice of 1 large lemon
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place chicken breasts between two pieces of plastic wrap and pound to an even 3/4-inch thickness.
- In a shallow dish or resealable plastic bag, combine olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, dried oregano, salt, and pepper.
- Add chicken breasts to the marinade, ensuring they are well coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
- Remove chicken from the marinade, discarding any remaining marinade.
- Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C) and chicken is cooked through with nice grill marks.
- Remove chicken from the grill and let rest for 5 minutes before slicing or serving whole.
- Serve with your favorite sides.
