Description

A festive and fun Grinch Cake made with green-colored white cake layers and a creamy homemade cream cheese frosting, topped with a red candy heart.


Ingredients

  • 1 box (15.25 ounces) white cake mix (plus ingredients to make the cake, e.g., eggs, oil, water)
  • Green gel food coloring
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4-5 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk or cream
  • 1 large red candy heart for decoration


Instructions

  1. Prepare the white cake mix according to package directions, but add green gel food coloring to the batter until a vibrant Grinch green color is achieved. Pour batter into two greased and floured 8-inch or 9-inch round cake pans.
  2. Bake according to package directions. Let cakes cool in pans for 10-15 minutes, then invert onto a wire rack to cool completely.
  3. While cakes cool, prepare the cream cheese frosting: In a large bowl, beat the softened cream cheese and butter with an electric mixer until smooth and creamy.
  4. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Add vanilla extract and milk (or cream), beating until the frosting is light and fluffy. Adjust consistency with more powdered sugar or milk if needed.
  5. Once cakes are completely cool, place one cake layer on a serving plate or cake stand.
  6. Spread a generous layer of cream cheese frosting over the first cake layer.
  7. Place the second cake layer on top and frost the top and sides of the entire cake smoothly or with decorative swirls.
  8. Carefully place the red candy heart near the top/center of the cake to represent the Grinch’s heart.
