Description

A simple and healthy recipe for soft, chewy banana oatmeal bars, perfect for a quick breakfast or snack.

Ingredients

  • 2 ripe medium bananas, mashed
  • 2 cups rolled oats (old-fashioned)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup milk (any kind)
  • 1/4 cup honey or maple syrup (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional add-ins: 1/2 cup chocolate chips, raisins, chopped nuts, or shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish or line with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, unsweetened applesauce, milk, honey (or maple syrup), vanilla extract, ground cinnamon, and salt to the bowl with the mashed bananas.
  4. Mix well until all ingredients are thoroughly combined. If using, fold in any optional add-ins like chocolate chips, raisins, nuts, or coconut.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes, or until the edges are golden brown and the bars are set.
  7. Let the bars cool completely in the dish on a wire rack before cutting into squares. This is important for them to hold their shape.
  8. Once cooled, cut into 9-12 bars. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.

Notes

  • Cooling completely before cutting is crucial for the bars to hold their shape.
  • Storage: Room temperature for up to 3 days, or refrigerate for up to a week.
