A simple and healthy recipe for soft, chewy banana oatmeal bars, perfect for a quick breakfast or snack.
Ingredients
- 2 ripe medium bananas, mashed
- 2 cups rolled oats (old-fashioned)
- 1/2 cup unsweetened applesauce
- 1/4 cup milk (any kind)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional add-ins: 1/2 cup chocolate chips, raisins, chopped nuts, or shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish or line with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, unsweetened applesauce, milk, honey (or maple syrup), vanilla extract, ground cinnamon, and salt to the bowl with the mashed bananas.
- Mix well until all ingredients are thoroughly combined. If using, fold in any optional add-ins like chocolate chips, raisins, nuts, or coconut.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, or until the edges are golden brown and the bars are set.
- Let the bars cool completely in the dish on a wire rack before cutting into squares. This is important for them to hold their shape.
- Once cooled, cut into 9-12 bars. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
