Ingredients
- 2 cups rolled oats (blended into flour or left whole for texture)
- 2 large overripe bananas, thoroughly mashed
- 2 large eggs
- 1 cup plain Greek yogurt
- 3 tablespoons honey
- 1 scoop vanilla protein powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
Instructions
- Begin by preheating your oven to 400°F (200°C) and lining a standard 12-cup muffin tin with liners.
- In a large bowl, whisk together the mashed bananas, eggs, Greek yogurt, honey, and vanilla extract until the wet base is smooth.
- In a separate bowl, combine the oats, protein powder, baking powder, baking soda, and cinnamon.
- Gently fold the dry ingredients into the banana mixture. Be careful not to over-mix, as this can make the muffins tough.
- Distribute the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 15 to 18 minutes. The muffins are done when a toothpick inserted into the center comes out clean.
- Allow them to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
- These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
- For added texture, leave the oats whole instead of blending them into flour.
