Description

A simple, healthy, no-cook chocolate pudding made with chia seeds, almond milk, and cocoa for a creamy, vegan dessert.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 2 tablespoons high-quality cocoa powder
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon alcohol-free vanilla extract
  • A small pinch of sea salt


Instructions

  1. In a medium-sized glass bowl or mason jar, combine the chia seeds, cocoa powder, and sea salt. Whisk briefly to break up any large clumps of cocoa.
  2. Slowly pour in the almond milk, maple syrup, and alcohol-free vanilla. Whisk vigorously until the cocoa is fully incorporated and the mixture is smooth.
  3. Allow the mixture to rest for about 10 minutes, then give it another thorough stir to prevent the seeds from settling at the bottom.
  4. Cover the vessel tightly and refrigerate for at least 4 hours, though overnight is preferred for the best set.
  5. Before serving, stir once more. If the pudding is too thick, add a splash of milk to reach your desired consistency. Garnish with fresh berries or a few dark chocolate shavings if desired.
