A simple, healthy, no-cook chocolate pudding made with chia seeds, almond milk, and cocoa for a creamy, vegan dessert.
Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk
- 2 tablespoons high-quality cocoa powder
- 2 tablespoons pure maple syrup
- 1/2 teaspoon alcohol-free vanilla extract
- A small pinch of sea salt
Instructions
- In a medium-sized glass bowl or mason jar, combine the chia seeds, cocoa powder, and sea salt. Whisk briefly to break up any large clumps of cocoa.
- Slowly pour in the almond milk, maple syrup, and alcohol-free vanilla. Whisk vigorously until the cocoa is fully incorporated and the mixture is smooth.
- Allow the mixture to rest for about 10 minutes, then give it another thorough stir to prevent the seeds from settling at the bottom.
- Cover the vessel tightly and refrigerate for at least 4 hours, though overnight is preferred for the best set.
- Before serving, stir once more. If the pudding is too thick, add a splash of milk to reach your desired consistency. Garnish with fresh berries or a few dark chocolate shavings if desired.
