Description
A healthy, no-bake version of Snickers bars made with pitted Medjool dates stuffed with natural peanut butter and chopped peanuts, then dipped in dark chocolate for a guilt-free treat.
Ingredients
- Medjool dates (pitted, 1 per ‘Snickers’, about 12 dates for a batch)
- Natural peanut butter (or other nut butter, about 1/2 cup)
- Chopped peanuts (or other nuts, about 1/4 cup)
- Dark chocolate (chips or bar, about 8 oz)
- Flaky sea salt (optional, for topping, to taste)
Instructions
- Carefully slice each Medjool date lengthwise and remove the pit, being careful not to cut all the way through so it can be easily stuffed. Gently open each date.
- Spoon a small amount of natural peanut butter into the center of each opened date, spreading it slightly to fill evenly.
- Sprinkle a few chopped peanuts over the peanut butter, pressing them gently so they adhere.
- Melt the dark chocolate in a microwave-safe bowl. Heat in 20-30 second intervals, stirring well after each, until smooth and completely melted.
- Using a fork, carefully dip each stuffed date into the melted chocolate, allowing any excess chocolate to drip back into the bowl.
- Place the chocolate-covered dates on a baking sheet lined with parchment paper. If desired, sprinkle with flaky sea salt immediately after dipping.
- Place the baking sheet in the freezer for about 15-20 minutes, or until the chocolate has fully set and the dates are firm.
- Once firm, serve immediately or store in an airtight container in the refrigerator or freezer.
Notes
- Use natural peanut butter without added sugars for a healthier option.
- This recipe is customizable; substitute almonds or cashews for peanuts if preferred.
- Store in the freezer for up to 1 month for a chewy texture.
