Description

A healthy, no-bake version of Snickers bars made with pitted Medjool dates stuffed with natural peanut butter and chopped peanuts, then dipped in dark chocolate for a guilt-free treat.


Ingredients

  • Medjool dates (pitted, 1 per ‘Snickers’, about 12 dates for a batch)
  • Natural peanut butter (or other nut butter, about 1/2 cup)
  • Chopped peanuts (or other nuts, about 1/4 cup)
  • Dark chocolate (chips or bar, about 8 oz)
  • Flaky sea salt (optional, for topping, to taste)


Instructions

  1. Carefully slice each Medjool date lengthwise and remove the pit, being careful not to cut all the way through so it can be easily stuffed. Gently open each date.
  2. Spoon a small amount of natural peanut butter into the center of each opened date, spreading it slightly to fill evenly.
  3. Sprinkle a few chopped peanuts over the peanut butter, pressing them gently so they adhere.
  4. Melt the dark chocolate in a microwave-safe bowl. Heat in 20-30 second intervals, stirring well after each, until smooth and completely melted.
  5. Using a fork, carefully dip each stuffed date into the melted chocolate, allowing any excess chocolate to drip back into the bowl.
  6. Place the chocolate-covered dates on a baking sheet lined with parchment paper. If desired, sprinkle with flaky sea salt immediately after dipping.
  7. Place the baking sheet in the freezer for about 15-20 minutes, or until the chocolate has fully set and the dates are firm.
  8. Once firm, serve immediately or store in an airtight container in the refrigerator or freezer.

  • Use natural peanut butter without added sugars for a healthier option.
  • This recipe is customizable; substitute almonds or cashews for peanuts if preferred.
  • Store in the freezer for up to 1 month for a chewy texture.
