Description

A simple and refreshing frozen treat made with creamy Greek yogurt, sweetened with honey, and topped with fresh strawberries, blueberries, granola, and coconut for a healthy snack.


Ingredients

  • 2 cups plain Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberries, sliced
  • 1/4 cup blueberries
  • 1/4 cup granola
  • 1 tablespoon shredded coconut


Instructions

  1. Line a rimmed baking sheet with parchment paper to prevent sticking.
  2. In a mixing bowl, whisk the Greek yogurt, honey, and vanilla extract until completely smooth.
  3. Pour the yogurt onto the prepared baking sheet and spread it into an even layer, approximately 1/4 to 1/2 inch thick.
  4. Scatter the strawberries, blueberries, granola, and coconut across the surface. Gently press the toppings into the yogurt so they stay in place.
  5. Freeze the sheet for at least 3 to 4 hours, or until the yogurt is rock solid.
  6. Remove from the freezer and use your hands or a knife to break the bark into irregular shards. Store the pieces in a freezer-safe bag.
