Description
A simple and refreshing frozen treat made with creamy Greek yogurt, sweetened with honey, and topped with fresh strawberries, blueberries, granola, and coconut for a healthy snack.
Ingredients
- 2 cups plain Greek yogurt
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 cup strawberries, sliced
- 1/4 cup blueberries
- 1/4 cup granola
- 1 tablespoon shredded coconut
Instructions
- Line a rimmed baking sheet with parchment paper to prevent sticking.
- In a mixing bowl, whisk the Greek yogurt, honey, and vanilla extract until completely smooth.
- Pour the yogurt onto the prepared baking sheet and spread it into an even layer, approximately 1/4 to 1/2 inch thick.
- Scatter the strawberries, blueberries, granola, and coconut across the surface. Gently press the toppings into the yogurt so they stay in place.
- Freeze the sheet for at least 3 to 4 hours, or until the yogurt is rock solid.
- Remove from the freezer and use your hands or a knife to break the bark into irregular shards. Store the pieces in a freezer-safe bag.
