Description

Healthy Ground Beef Taco Bowls are a nutritious, Mexican-inspired meal featuring seasoned lean ground beef over rice, topped with fresh vegetables, beans, cheese, and avocado for a balanced and flavorful bowl.


Ingredients

  • 1 cup uncooked white rice
  • 1/2 tablespoon olive oil
  • 1 cup diced yellow onion
  • 1 pound lean ground beef (preferably 90/10)
  • 1 tablespoon quality taco seasoning
  • 1 tablespoon tomato paste
  • 3 tablespoons beef or chicken broth
  • Salt and freshly ground black pepper, to taste
  • 1 (15-ounce) can black beans, thoroughly rinsed and drained
  • 4 packed cups shredded romaine lettuce
  • 1 cup quartered cherry tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1 small ripe avocado, sliced or diced
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving
  • Optional toppings: salsa, pico de gallo, sour cream, Greek yogurt, hot sauce, sliced jalapeños, tortilla chips


Instructions

  1. Begin by preparing your rice according to package directions. For a flavorful touch, consider adding a squeeze of lime juice and some fresh cilantro to the cooked rice once it’s fluffed.
  2. Heat a large skillet over medium heat. Add the olive oil and allow it to shimmer. Introduce the diced onion, seasoning with a pinch of salt and pepper. Sauté, stirring occasionally, for 3-4 minutes until the onion softens and becomes translucent.
  3. Add the ground beef to the skillet. Break it apart with a spoon and brown for 3-4 minutes, ensuring it’s evenly cooked through.
  4. Stir in the taco seasoning, tomato paste, and broth. Combine thoroughly, then allow the mixture to simmer for an additional 2-3 minutes, ensuring all flavors meld and the beef is well-seasoned. Adjust salt and pepper as needed.
  5. To assemble your taco bowls, divide the cooked rice among four serving bowls.
  6. Spoon the seasoned ground beef mixture generously over the rice base.
  7. Arrange the rinsed black beans, shredded romaine lettuce, quartered cherry tomatoes, shredded cheddar cheese, and sliced avocado around the beef mixture in each bowl.
