Description

A hearty and flavorful Healthy Taco Soup made with lean ground turkey or beef, various beans, tomatoes, corn, and seasoned with taco and ranch mixes, perfect for a satisfying meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground turkey or beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (10-ounce) can Rotel diced tomatoes with green chilies, undrained
  • 1 (15-ounce) can corn, drained
  • 1 (4.5-ounce) can chopped green chilies, undrained
  • 1 (1.25-ounce) packet taco seasoning
  • 1 (1-ounce) packet ranch seasoning mix (dry)
  • 4 cups chicken broth
  • Optional toppings: shredded cheese, sour cream, avocado, tortilla chips


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey/beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Stir in the rinsed and drained black beans, pinto beans, undrained diced tomatoes, Rotel, drained corn, and undrained green chilies.
  4. Add the taco seasoning packet and ranch seasoning mix. Stir well to combine.
  5. Pour in the chicken broth and bring the soup to a simmer.
  6. Reduce heat to low, cover, and let simmer for at least 20-30 minutes to allow flavors to meld.
  7. Taste and adjust seasonings if necessary.
  8. Serve hot with your favorite toppings such as shredded cheese, sour cream, avocado, or crushed tortilla chips.

Notes

  • Using lean ground turkey or beef contributes to the ‘healthy’ aspect of this soup.
  • The simmering time is important for the flavors to fully develop.
  • Adjust the amount of Rotel or green chilies based on your preferred spice level.
